blt with lemon aioli on tomato basil bread

Spread butter on one side of all four slices of bread and toast until golden brown. In a medium cast-iron pan or other heavy saute pan, cook the bacon over medium heat until it is crispy, 6 to 8 minutes. Drain on a paper towel.

To make aioli, whisk the mayonnaise and lemon juice together and season with salt and pepper. Spread the aioli on the butter side of the bread slices, and top with the bacon, tomato, and arugula. finish with the remainig slices of bread. Slice each sandwich in half and serve.

Makes two sandwiches
