Beat cream cheese and powdered sugar until light and fluffy. Add vanilla.
Wash strawberries and remove stems. With the small end of a melon baller,
scoop out the inside of the berries. Fill berries with the cream cheese mixture.
Dip the cream cheese end of
each strawberry into the graham cracker crumbs. Refrigerate. Serve the same
day.
